当把粮食置于膨化主机内以后,随着加温、加压的进行,原料中的水分呈过热状态,原料本身变得柔软,通过膨化机螺杆推送到第三区域时,物料便达到高温高压的状态,当到达一定高压而启开膨化机模头时,高压迅速变成常压,这时物料内呈过热状态的水分便一下子在瞬间汽化而发生强烈爆炸,水分子可膨胀约2000倍,巨大的膨胀压力不仅破坏了粮粒的外部形态,而且也拉断了粮粒内在的分子结构,将不溶性长链淀粉切短成水溶性短链淀粉、糊精和糖,于是糙米卷中的不溶性物质减少了,水溶性物质增多了,从而糙米卷变得酥脆可口、入口即化的口感、沁人心脾。
